Epic Beef Stew Recipe

Ingredients:
- 2 Lbs Beef Chuck
- 3 Tbsp Olive Oil
- 1 Large Onion
- 2 Cloves Garlic
- 4 Large Carrots
- 3 Large Potatoes
- 2 Cups Beef Broth
- 1 Cup Red Wine (Optional)
- 2 Tbsp Tomato Paste
- 2 Tsp Dried Thyme
- 1 Tsp Dried Rosemary
- Salt and Pepper to Taste
- 2 Tbsp Flour (Optional, for Thickening)
Cooking Instructions:

Prep the Ingredients:
- Cut the beef chuck into 1-inch cubes.
- Chop the onion.
- Mince the garlic.
- Peel and slice the carrots.
- Peel and cube the potatoes.

Sear the Beef:
- Heat the olive oil in a large pot over medium-high heat.
- Add the beef cubes and sear on all sides until browned.
- Remove the beef from the pot and set it aside.

Sauté Vegetables:
- In the same pot, add the chopped onion and minced garlic.
- Cook until softened, about 3 minutes.
- Stir in the tomato paste, dried thyme, and rosemary.

Deglaze:
- Pour in the red wine (if using) and beef broth, scraping up any browned bits from the bottom of the pot.

Simmer:
- Return the beef to the pot.
- Add the carrots and potatoes.
- Bring the stew to a boil, then reduce the heat and simmer for about 2 hours, until the beef is tender and the vegetables are cooked through.

Thicken (Optional):
- For a thicker stew, mix the flour with a little cold water to make a slurry.
- Stir the slurry into the stew during the last 10 minutes of cooking.

- Taste the stew and adjust seasoning with salt and pepper.
