Epic Beef Stew Recipe

Ingredients:

  • 2 Lbs Beef Chuck
  • 3 Tbsp Olive Oil
  • 1 Large Onion
  • 2 Cloves Garlic
  • 4 Large Carrots
  • 3 Large Potatoes
  • 2 Cups Beef Broth
  • 1 Cup Red Wine (Optional)
  • 2 Tbsp Tomato Paste
  • 2 Tsp Dried Thyme
  • 1 Tsp Dried Rosemary
  • Salt and Pepper to Taste
  • 2 Tbsp Flour (Optional, for Thickening)

Cooking Instructions:

  1. Prep the Ingredients:

    • Cut the beef chuck into 1-inch cubes.
    • Chop the onion.
    • Mince the garlic.
    • Peel and slice the carrots.
    • Peel and cube the potatoes.
  2. Sear the Beef:

    • Heat the olive oil in a large pot over medium-high heat.
    • Add the beef cubes and sear on all sides until browned.
    • Remove the beef from the pot and set it aside.
  3. Sauté Vegetables:

    • In the same pot, add the chopped onion and minced garlic.
    • Cook until softened, about 3 minutes.
    • Stir in the tomato paste, dried thyme, and rosemary.
  4. Deglaze:

    • Pour in the red wine (if using) and beef broth, scraping up any browned bits from the bottom of the pot.
  5. Simmer:

    • Return the beef to the pot.
    • Add the carrots and potatoes.
    • Bring the stew to a boil, then reduce the heat and simmer for about 2 hours, until the beef is tender and the vegetables are cooked through.
  6. Thicken (Optional):

    • For a thicker stew, mix the flour with a little cold water to make a slurry.
    • Stir the slurry into the stew during the last 10 minutes of cooking.
  7. Season and Serve:

    • Taste the stew and adjust seasoning with salt and pepper.
    • Serve hot and enjoy your epic, hearty dish!
